We come from a family, producing olive oil the last 30 years. This year, we finished our factory. It includes everything, from the olive tree to the bottle of olive oil. Why this is important?
There is a brand new olive mill that is manufactured from scratch. It will include an olive mill and a bottling plant.
We control the total procedure: from cultivating our olive trees to bottling and distributing. The most important element for us is traceability. Our family has around 5000 olive trees and we continue on growing the numbers by planting new trees every year. The olives belong to megaritiki, a variance with strong taste, longer expiration date and better qualitative caracteristics.
· Our olives will be processed following this procedure: go to olive mill within few hours in order to be extracted, using cold extraction. The malaxing procedure is limited so that all the qualititative caracteristics such as polyphenols and aromas are preserved. Afterwards, it will be stored in specific stainless steel tanks with a specific number. In case something happens, we can control the whole procedure. The tanks, after filling, will additionaly have nitrogen so that all the caracteristics of this divine olive oil are preserved.
· Improved organoleptic quality. Higher percentage of polyphenols, that stays the same even after 12 months. Longer duration of taste. Lower acidity. Superoxides are lower by 10% compared to other plants.
